Pizza Dough Recipes

I know I will be posting tons of pizza recipes so I am placing the dough recipes on the side to make it 
easier! I will be adding the rest of the doughs very soon!


Basic Pizza Dough (hand tossed)
3 1/2 cups of "00" flour* or white flour
1 1/2 cups of warm water
1 1/4 ounce packet of active yeast
1 1/2 teaspoon of Sugar (3 or so pinches)
2 tablespoons of Salt
1/4 cup of Extra Virgin Olive Oil
extra flour for dusting

Whisk together the warm water, yeast and sugar in a bowl and let sit for 10 minutes. Put flour and salt into the mixer and turn on mixer on low slowly pour water with yeast into it and then the extra virgin olive oil.  Increase speed of mixer and mix dough on dough hook until dough is smooth and pliable.

Let dough rise in a oiled bowl that is covered in a warm place for 1-2 hours. It should double in size.

Spread extra flour out on a flat large surface. Play with the dough beat on it spin it around in the flour get it nice and workable. For smaller pizzas cut in to four balls. For two big ones cut in half. To make it easier refrigerate the dough for a couple hours.

Push out air bubbles in the dough and slowly push out from the middle of the ball smoothing it and shaping it as you go. You can use a roller to do this.. 

Once Pizza dough is shaped you can do one of two things. Use a preheated oven at 450* put the pizza dough in for 5 minutes to crisp it up or You can use a trick I recently learned from Mario Batali in Molto Gusto. 

Heat a large skillet on the stove top or griddle oil it lightly and place the pizza dough in the skillet and let it crisp up for a good 10 minutes but watch it so it only browns and does not burn!

* "00" flour can be hard to find but it makes the pizza taste so much better! You can find it at your grocery store if your lucky. In Utah you can find it at the Lehi Roller Mills or Caputo Italian Market Downtown SLC.
